Mate I would definitely watch the Audi one and the Porsche ones, I think Audi have done two shows that are on there, Porsche have done one about the 919 which I did not enjoy, but the one covering Le Mans and the N24 with the 911 is superb. There is loads of stuff from the 70's and 80s aswell.
The Fassbender thing is excellent, really well put together.
But perhaps your best bet is to find the WEC youtube channel, there are loads of races from last year on there and from a few years ago when you had Toyota, Porsche and Audi battling in WEC races. You will get into the stylke of racing, pitstops, multi class stuff and the ups and downs, there is nothing like watching a race.
For exxmple I spent a few periods over XMAS watching the Bahrain race, watched the whole thing in a few days.

Got a couple of day trips planned, hired a Dodge Challenger so should be fun!

Easily the best track for viewing that I’ve been to, vastly better in that regard than Le Mans, where, in reality, there are very few spots where you can see what these cars are really capable of Entries for the WEC, 38 cars entered:
